Cucumbers… The Underrated Champ of Veggies!

CucumberI have always known to reach for a Cucumber to soothe my eyes when they seem to be baggy and or just otherwise tired. I didn’t see Cucumbers as very nutritious or particularly beneficial in any manner.

I based my thought mainly on the fact that cucumbers have such a high water content. 96 Percent water in fact!  I was wrong, however!  Cucumbers provide us with valuable antioxidant, anti-inflammatory, and anti-cancer benefits! It may be no super food, but it certainly is nutrient dense!  Cucumbers are also noted for the following:

  • High in vitamin C;

  • Good source of heart-healthy potassium and magnesium

  • Good source of bone-building manganese

Cucumbers have a good amount of energy-producing vitamin B5 and they also contain the important nail health-promoting mineral silica.

    I have always like cucumbers just was not big on them. Going to have to start including some of the cucumbers on next grocery list 🙂
